We received your e-mail inquiring if there is any alcohol in Kikkoman
Soy Sauce. You wrote that you could not consume alcohol “due to
religious dietary restrictions.” We always welcome any questions our
consumers may have about our products.
Kikkoman Soy Sauce is a naturally brewed product…like wine or beer.
It is made from wheat, soybeans, salt and water. During the
fermentation process, the wheat starches are broken down to sugars and
part of the sugar is changed into alcohol. The alcohol adds to the
aroma and overall flavor of our soy sauce. Since this product
contains approximately 1.5 to 2% alcohol by volume, we cannot
recommend our soy sauce for your consumption.

Most Chinese restaurants use naturally brewed soy sauce in cooking the Chinese foods such as vegetable fried rice and also provide it in the bottles on the serving tables. Some Chinese restaurants also supply the soy sauce in small packets with ingredient list and have been found to contain acidified soy protein hydrolyzed soy sauce and not the haram soy sauce.
