Molten-Chocolate Cakes


These minicakes with soft chocolate centers can make even the most jaded chocolate lovers swoon. You can assemble the cakes ahead and refrigerate them in ramekins for 24 hours -- or freeze them for up to 2 weeks before baking. Bake refrigerated ramekins 9 to 10 minutes; frozen ramekins, 15 to 16 minutes.

3 tablespoons plus 1/4 cup sugar
6 tablespoons margarine or butter
4 ounces semisweet chocolate
1/4 cup heavy or whipping cream
1/4 cup all-purpose flour
1/2 teaspoon vanilla extract
2 large eggs
2 large egg yolks


1. Preheat oven to 400 degrees F. Grease eight 6-ounce ramekins or custard cups; sprinkle with 3 tablespoons sugar.

2. In 3-quart saucepan, heat margarine or butter with chocolate and cream over low heat until melted and smooth, stirring occasionally. Remove saucepan from heat; whisk in flour and vanilla until blended.

3. In medium bowl, with mixer at high speed, beat eggs, egg yolks, and remaining 1/4 cup sugar until very thick and pale yellow, about 10 minutes. With rubber spatula, gently fold egg mixture into chocolate mixture, one-third at a time, until blended.

4. Pour batter into ramekins, filling each about three-fourths full. Place ramekins in 15 1/2" by 10 1/2" jelly-roll pan for easier handling. Bake 9 to 10 minutes, until edge of cake is set but center is slightly jiggly.

5. Cool in pan on wire rack 5 minutes. Run small knife around sides of ramekins. Invert onto dessert plates and serve immediately.

Ingredients :

1 kg cream cheese
2 eggs
250 g sugar
2 teaspoons ground ginger
1 lemon
30 g butter
1 packet digestive biscuits

Recipe :
Grease a 22cm cake tin or flan dish, preferably with removable bottom.
Squeeze the lemon.
Put the cream cheese in a large bowl.
Add the sugar, eggs and ginger, whisk and add lemon juice. Beat for a further 3 minutes.
Preheat oven to 180°F (350°C).
Crush the biscuits, line the bottom and sides of the cake tin.
Pour the mixture on top.
Cook for 50 minutes.

Chicken & Lime Kababs



Ingredients :
800g chicken breast
6 limes
6 small green chillis
Herbes de Provence, or mixed herbs
3 apples, unpeeled
3 tablespoons olive oil
Salt & pepper

Marinating time: 6h
Chilling time: 30 minutes

Recipe :
Cut chicken into cubes.
Marinate for 6 hours, in the juice of 4 limes and chopped chillis.
Season, then sprinkle with herbs.
Cut apples into cubes.
Sprinkle with juice of two remaining limes.
Leave to chill for 30 minutes.
Skewer meat, alternating chicken with apples.
Brush with oil and grill or barbecue for 15 minutes.

Chicken Salad Sandwich



Ingredients :
4 slices wholemeal bread of choice
1 sauted chicken breast
4 gherkins
4 tablespoon olive oil
2 tablespoons mustard
2 lettuce leaves
4 slices tomato

Recipe :
Slice chicken breast in half, arrange each half on a slice of bread.
Add a gherkin.
Drizzle each one with two tablespoons olive oil and a tablespoon mustard.
Add a lettuce leaf and two slices tomato.
Close the sandwiches and dig in!
